If you don’t like onions you should try cooking them in butter on low heat for 30-45 minutes until they’re a deep amber and mixing them with sour cream, a bit of mayo, salt and pepper, and a pinch of cayenne pepper. Boom, caramelized onion dip.

This is genuinely good culinary advice. Thank you for sharing. I may try it soon.

That said, you bastard! You took all the delicious mustard gas tingle out of the onion! Poor ex-delicious onions.

Yeah. Raw onions are just about the only food ingredient I absolutely can’t stand to eat. But I love sauteed onions. I work at a fire house and do a lot of the cooking on shift. If anyone bitches about a pack of onions, I tell them I’ll add onions at the same time I add Habaneros. I love crazy hot stuff, but contrary to popular firefighter belief, most of the guys are huge weenies when it comes to spicy.

      • Fawkes@lemmy.zip ⁨2⁩ ⁨weeks⁩ ago

Same actually. But I later discovered the reason why I don’t like raw onions is because I have an allergy that gives me migraines when I eat them. Cooking them is fine and delicious though.

But yeah, used to be teased incessantly by family for being “Picky.”

I used to be that way. I think you’ll eventually find that you like them. Not enough to take a bite out of a raw onion but being cool with them on a burger at least. Sometimes stuff like this just clicks for me as I get older. No idea why lol.

You probably know this since you work in a kitchen, but a buddy recently taught me that the trick for taking the edge off raw onion—e.g. to put on a salad or burger—is to soak the slices in cold water for a few minutes. Keeps the sweetness and flavor, but seriously reduces the sulfuric burn!

Try putting those red onion in water and vinegar (with a pinch of salt and sugar). They’ll become a deep red/purple and loose all acidity, gaining a sweet and vinegary taste. You can keep them in there for quite a long time too if done correctly

      source
    • stickyprimer@lemmy.world ⁨2⁩ ⁨weeks⁩ ago

Absolutely. I would say that not liking onions is a bit of an illusion though. They really are in everything and are so elemental to cooking. I think if people understood this better they wouldn’t fear onions so much. Sometimes fear of onions is also part of a generalized “zero seasoning” palette common among some older white Americans, where even black pepper is considered “spicy” and most food is totally flavorless and usually cooked to a pulp. It’s not about growing up… this palette is just missing out on so much happiness in the world. Being just a tiny bit brave with food is a wonderful decision to make in life.

      • kolmaskommentoija@sopuli.xyz ⁨2⁩ ⁨weeks⁩ ago

It is mostly a texture thing for me, and I doubt I am the only one. I do not mind the taste that much, if it is onion powder. But even tiny chunks of cooked onions make me gag when they crunch on your teeth. Absolutely disgusting. If I have to eat something with onions, I will pick out the pieces, no matter how tiny they are.

I would agree, but my sil used to only eat chicken nuggets and canned green beans. In their family growing up, food was not for enjoyment, it was strictly for calories. Both her husband and I have been working on expanding her palate (we got her hooked on gyro a few years back. That was a happy moment for her family).

We don’t and didn’t judge her, we just wanted her to be able to enjoy nicer meals. Her husband is a great cook, so he’s gotten to vicariously experience amazing foods for the first time again. I would be envious, but I get this experience with my nieces and nephews (only four of them have parents who can cook well). It’s a great feeling, sharing delicious foods with loved ones, and also rubbing in your siblings’ faces that their kids aren’t picky when you cook for them.

As a person that generally dislikes onions, it’s different - I’m not a fan of onion flavor and don’t like the texture, but I know it can positively contribute to a dish for me, primarily if it’s not overly prominent.

It’s like seasoning, eating some seasoning alone might make it taste bad, you might dislike dishes that use it as a main flavor, but if it’s just a small component of a dish it might be a good thing. I haven’t had marmite, but from what I’ve seen it seems kinda like that, very strong offputting flavor that complements other things very well.

    • Viceversa@lemmy.world ⁨2⁩ ⁨weeks⁩ ago

        source
    • SirCosmoBluebeard@piefed.world ⁨2⁩ ⁨weeks⁩ ago

For me it’s primarily the texture. I do like the flavor of onion as long as it’s not overpowering. Cooked or not, biting into onion is like nails on a chalkboard but on my teeth. If it’s chopped up small enough or powdered I don’t have a problem. When my wife makes food with bigger pieces of onion, she makes them big enough that I can pick out.

For a long time, though, I would just say I don’t like onion and try to avoid it altogether.

Doesn’t matter. Brains go ‘nope’. I’ll keep trying it I guess until my brains no longer try to convince me fish are literal poison.

I’m not fish averse, but my wife is. I have managed to make one fish she likes. Take a frozen Mahi Mahi filet, preheat air fryer to 400F, rub the filet with a bit of oil, and season with garlic salt, bit of black pepper, and a pinch of crushed red pepper. Place on the airfryer (still frozen) for 14 minutes, flipping halfway through. It should end up slighty crispy on the edges, moist and flaky inside. Finish with lemon (it’s essential).

Mahi mahi is the least fishy fishy out there. It still has a fish texture, but tastes like meat. Not dissimilar to chicken.

But also, it’s perfectly okay to not like something. Don’t waste your money unless you really want to try it.

I know the cilantro example is famous, but as a super taster and having other people with the gene onions are very divisive. For me, anything more than a hint is overpoweringly disgusting and the idea of actually biting into one directly fills me with dread.

Onion powder and garlic powder are both very preferable to the actual substance taste wise.

If you know someone in your life that really likes diet soda and other artificially sweetened things and even prefers it to the regular, they just might be a super taster.

If you know someone that finds wine, beer, tea and coffee horrifically bitter to the point that they can’t even understand how you enjoy it. They may also be a super taster.

If you know someone that complains Seltzer’s like white claw and lacroix are absurdly bitter and completely disgusting. That is likely because they can taste a profile called bitter two, which is prevalent in these things because they are a super taster.

I know nobody will read this and learn to quit bitching at people about what they like, but I figured I’d at least try.
