      Cooking them too slow can do that, it’s better to have less time and hotter. They stay slightly former and drier with more of a grilled texture. Adding liquids can make it act more boiled.

      I love onions in stew, or in gumbo or jambalaya - some place where I can’t see 'em, and certainly don’t have to chew through them.

    If you don’t like onions you should try cooking them in butter on low heat for 30-45 minutes until they’re a deep amber and mixing them with sour cream, a bit of mayo, salt and pepper, and a pinch of cayenne pepper. Boom, caramelized onion dip.

      Yeah. Raw onions are just about the only food ingredient I absolutely can’t stand to eat. But I love sauteed onions. I work at a fire house and do a lot of the cooking on shift. If anyone bitches about a pack of onions, I tell them I’ll add onions at the same time I add Habaneros. I love crazy hot stuff, but contrary to popular firefighter belief, most of the guys are huge weenies when it comes to spicy.

    Fuck you asshole, I love onions, but I’m allergic. After a major incident I have learnt to avoid them completely. Luckily this seems like a common enough thing that onion free versions of stuff are usually available.

      I can’t eat raw onion or anything in the onion family, and onion powder appears as a flavouring on a large percentage of snacks.

      Cooked onion is ok though, once it’s translucent. Took years to figure out what was triggering the migraines.

        Yeah it sucks. I can’t eat cooked onions as well as raw or powdered. I do a little bit better with green and red onion in small amounts. But it’s a risky proposition, so I rather avoid the completely.

      I wanna know where you shop. I still have to run the gamut of ‘I’m allergic to onions’, ‘does that include green onions?’ ‘…yes.’ among other key signifiera that people don’t really think about what an onion is normally.

      I really miss garlic.

        Just regular super markets, perhaps I’ve just gotten better at finding the onion free stuff. I’ve also figured out for some items it says onion powder as an ingredient, but I have zero reaction. It might be just a tiny amount perhaps, not enough to cause a reaction. Or somewhere along the way the recipe changed and a onion substitute is used without them updating the ingredients list. I have also found out the hard way not everything is like that tho and have gotten reactions from stuff with onion powder in them, even in small amounts.

        I still remember finding out I was allergic. Apparently my mom knew since I was very small and just made sure I never ate onions. She however never actually told me, or maybe she did and I forgot because I was a kid, who knows. Until I was a teenager and ate dinner regularly at my girlfriend’s place. Not before long we ate a delicious rabbit stew, which also contained a lot of onion. I proceeded to be sick for weeks after. My mom laughed at me saying I was allergic to onions and I was dumb for eating something like that. I said she never told me I was allergic, but she was sure she had. I was so sick, I learnt my lesson and have avoided onion ever since.

    Can confirm. Didn’t like onions as a kid, always thought they were useless and added no flavor to a dish. Got older, learned a bit more about how to cook them and now I like putting onions in things.

    Fructan sensitivity 🥲 I appreciate the flavor they add, buuut don’t appreciate how they digest in my body. I carry food enzymes with me when I’m out though- kind of hard to avoid when I’m not the one cooking. I do want to try adding them to my oil infusions sometime!

      Onions aren’t the same, they have a mild flavor that blends with most everything. Cooking it with stuff can make them mostly disappear and just add a mild savory note. Eating caramelized onion on top is a strong flavor but most of the time it’s melded in.
