It is not jumpy. It being close to zero can be fixed on your end by choosing proper y scale.
A sudden change in value is different to a trend.

I think this time scale is on a 10 year timescale? looking at the graphs on XE.
The value of the Argentine peso has fallen less quickly since Milei took office in December 2023, but it still has fallen 50% since then.
