It’s the same flavour (from butyric acid) in both. It just depends on what your brain chooses to associate that smell with that determines the taste. So your brain is just switching between the two. Maybe look at the cheese packet when you’re eating it to see if you can help your brain get the right answer

I notice it when I eat cheese mixed with something acidic or spicy. Quite a discomforting taste but it doesn’t typically stop me from eating it anyways
No, but I remember once reading an online post where someone didn’t know they were allergic to (certain?) cheese and thought everyone reacted to it the way they did.
I used to be lactose intolerant but didn’t know it so I always ate ice cream until I started feeling nauseous and assumed that was just because I had eaten too much ice cream at once.
Now I’m just lactose quietly annoyed.

Yes, that is normal. Many cheeses get their taste/smell from butyric acid, which is a chemical that is also found in vomit.
