  French food is just smothering everything in a cream sauce and cooking it too long.

  Add a reduction somewhere in the recipe to make it take even longer and charge more for it.

  Bonus points if it is a baked good and completely ruined if you don’t follow every step perfectly.

  Basically an excuse to eat straight milk fat and look fancy doing it.
