Yeah, my mother was with a guy she was dependent on when I was a kid. He was also a drunk, violent and controlling. Dunno if this guy is violent, but this level of controlling usually gets violent. You’re doing your kid a disservice by staying with him, and they might very well resent you for it later in life, or at the very least learn an extremely unhealthy relationship model from the two of you. Either way, good luck with this. Others have told you how to actually get rid of the parental controls for real. I think you’re gonna find its not as simple as just uninstalling stuff.
Just go into the screen time settings on your iPhone and turn it off. If you can’t, hes given you either a child account (most likely) or a supervised icloud (highly doubt). This goes beyond any of that though. I wouldnt be married to anyone that controlling. Thats some wind up in a body bag for a guy talking to you shit.
Get a divorce lawyer. You’ve got bigger problems. The iPhone will be free when you are.
Get a used phone from a friend and hide it from your controlling husband.

This is not healthy husband/wife behavior. If you don’t feel comfortable talking with him about your own freedom, then you don’t have a husband, you have a captor. If you live in the US or EU, there are resources to help you escape.
have your husband remove the feature. explain all the downsides like how it affects your work and social life to not be able to add contacts.
if he refuses, as the rest of the comments point out, you may be in an abusive relationship. a marriage is built on trust. would he accept you locking down his phone the same way?
otherwise, maybe go pick up a burner phone from walmart or something.
