Yellow is most likely cheddar, and white is either Monterey Jack or mozzarella, but doesn’t look flopsy enough to be mozzarella

I used to work at a cheese plant; mozarella ain’t that floppy when its a 40lb block fresh off the line.

That’s a fair point, I was thinking of the mozzarella in oil or other liquid which probably makes it less rigid
