honestly sticking with FOSS is a good idea.
ive been using firefox for more than a decade now without problems. mozilla is certainly fumbling but the browser is still good enough imo.
truly open phones would solve that problem too.
as with email services, i don’t think theres really a good solution there since these services are expensive to run reliably.
its a capitalism problem more than anything, really.

i lived a lot of my life in concrete apartments, you can’t hear your neighbours unless they are being obnoxiously loud, or the apartment is obnoxiously small. which to be fair seemed to be some of those, but still.
