Wii U version is better than GCN version, even with upscaling in Dolphin, so def stick with that. Quality of life changes and upgraded textures - it’s the way to go. Give it a try in emu.
But low key a Wii U runs for less than $100 these days, and it’s got great games (one of the best consoles for Zelda generally) but is also an emulation and homebrew beast. Even the vWii on it can be hacked for GameCube games and standard Wii homebrew. I would just buy a Wii U tbh. I love mine!

The Triforce Quest has been reworked to be much more efficient.

One of the biggest differences is the hunt for the triforce pieces. In the original you need to find and pay to decipher 8 charts and then gather the 8 pieces, in the HD version there are only 3 charts and pieces
