Maybe they’re like ticks or mosquitoes and concentrate the blood cells rejecting most of the liquid part, but because their physiology is closer to human it fucks them up.
Dissent kind of vampire but in The Strain one of them is killed because the old man slammed a bottle of blood thinners first and the vamp basically started to melt.

Garlic thins the blood which reduces coagulation. Vampires being allergic to it, is a deception of there own making.
