It’s not much different than starting a new game of SIMS and deleting your old characters.

That’s an interesting point, I always assumed that omnipotence meant everything would be trivialy easy, but I suppose that might not be true. It would explain why he decided a flood would be the easiest ‘reset button’, but even if that’s the case it really calls into question his omniscience
