Canteens, animal skin water carriers, maybe water barrels for people with wagons. They had to plan routes with available water from springs and rivers frequently enough that they could carry enough with them in between sources.

My wife also said that they used word-of-mouth. Billy Bob would tell you that 5 km past the big red rock there was a spring or stuff like that.
