Vanillin, the modern artificial vanilla flavor, is made from lignin, one of the main components of bark. Beavers eat a lot of bark, and thus process a lot of lignin. Apparently the lignin accumulates in their anal scent glands.

I hear the beaver glands taste like vanilla, but I can’t be sure that’s not just a prank people pull to get unsuspecting victims to lick beaver ass.
