Do we need either though? Humans survived for centuries without data centers or meat processing plants.

We did, but we ate meat for most of that time and most still do. The scale of humanity requires mechanisation of some sort. Most people won’t turn to plant based or lab grown unless they have no choice, unfortunately.

As food production becomes more and more centralized in macro farms, resource over utilization and environment saturation become a larger problem.
Because we're moving away from a large number of producers and manufacturers to a hyperconsolidated vertical food manufacturer, this will become the norm, so will price gauging.

Small-scale meat production would use as much water as large-scale, I can only imagine. And that’s a good thing. We don’t want to get sick from tainted meat.
