I’ve had beef carpaccio before, I don’t think horse sashimi would be much different. So, I’d try it if offered, I wouldn’t specifically seek it out on a menu, though.
Hell No to chicken sashimi, though. Honestly, if I was in Japan I’d assume that the chef knows what they’re doing, but I still wouldn’t be able to get over the “what if they don’t?”.

Why wouldn’t horse meat be allowed to serve in restaurants? It’s perectly normal here, very tasty and good quality meat.
Raw chicken, no, salmonella risk. All meat would need to be tested, every single piece, so it wouldn’t be very sustainable.
