One thing that's really important with Galaxy devices is understanding that you can uninstall a lot of crap that it installs using ADB and a command line.
I just upgraded from an S9 to a second hand S10, and the very first thing that I had to do was run a script of like 80 lines removing all of the things that I was never going to use. Fundamentally changes the phone, makes it way better.

I just got through to each app I don't like, go to App Info, tap "disable". It basically does the same thing
