That could be good. The cheese is a little weird.
Dry cheeses like pecorino romano and parmesan actually mesh well with sweet flavors. This sounds tasty to me
It would be tasty except for the textures do not for together. Apples + pasta is not a good combo.
It might work if the apples were sliced to potato chip level of thin. Definitely not cubed though.
But that’s putting a lot of work into something that likely won’t taste very good to begin with.
