Iâm using up the last of my tomato harvest to make soup. The recipe is made up as I go, and at the moment itâs oven roasted tomatoes, garlic and onion, simmering away with some vegie stock from the freezer and a bit of bacon for pizzaz. I have no idea what itâs going to end up like but it smells sensational.

Fully approve of oven roasting the toms before soupifying them. They lose water and the flavour intensifies amazingly. When can I come over and do some quality control testing ???

Any time! Its done, pureed and added a dash of cream and its sensational with some homebaked spelt sourdough toast.
