They stager their crops.
Basically, it takes 20-30 years for a yellow pine to reach harvest. So they have lots of (huge) tracks that are growing, each lot is planted in sequential years- one lot is planted while another is harvested

Logging is done to order too. Crews are directed to lots that have the type and grade of logs, and are cut to lengths that match what the clients are ordering and the ships are ready to take (here in NZ where most logs are exported)

there’s that, too. a lot of it depends on what’s being farmed, and how much regular deamand there is for it.
