Sometimes I’m putting refrigerated stuff into the freezer, like bulk meats, not transporting frozen goods.

Freezer needs good airflow otherwise the coils will ice over. Same for the fridge only things have to get really bad there for ice to form.

If everything is cold, there’s no need for airflow in the middle.
Why do you think bulk stuff is frozen together and packed as tightly as possible?

You don’t understand how a freezer works, you need to look up the difference between convection and conduction. A freezer relies primarily on convection and without airflow you’re not getting that hence the coils at the back freeze while the food at the front thaws.
