I always liked onions in things. In fact I liked all things kids were supposed to hate… Except for eggplant. I just don’t like eggplant.

yeah the teacher raised her voice and told me i should leave some for others (only like a quarter of my plate was broccoli and i only took one plate of food and u know… broccoli isn’t the most popular thing out there)
she was a substitute teacher when our teacher was sick and was a bit weird in general. after her shifts at our class, she was never a substitute teacher for our class again so after she was gone i kept going as usual and nobody complained ever again xD
this was somewhere around grade 3 to 6, probably 4th or 5th

There has always been a lot of poorly cooked eggplant going around. It has a ton moisture that needs to be drawn out through salt and/or roasting and frying to make it not be mushy.
Cooked properly crispy it can be delicious.

It also absorbs oil like crazy, so you have to be careful and when and how you introduce fats.

Remove skin. Slice. Cook on medium heat until most moisture has been drawn out. Add olive oil, salt, black pepper and tomato paste. Serve with rice and grilled meat.
