Relishes aren’t really a thing in Germany, so, traditionally you only put mustard on a Bratwurstbrötchen.
However, the sausage itself already contains herbs and spices, like a copious amount of marjoram, some pepper, mace, allspice, and sometimes wild garlic, caraway, or ginger.
