Occasionally there will be specific shelves or event spaces that don’t have a planogram will be laid out by someone in-store, but this is usually a pretty small percentage of the store.
Sure. But space optimization is also a consideration. You can’t put a 24 pack of water on the top shelf for grandma to pick up. It’s designed with the customer in mind as well.
