Cookies are the sort of thing you can make a bit at a time, you don’t have to do everything in one go. So you could write an ingredients list for when you have the energy to shop next, then when you have the ingredients you can measure out an ingredient or two at a time when you have the energy, then mix the dough and put it in the fridge until you have the energy to shape it etc.
