I know everyone here says that this is somewhat safe because the employees are told not to interfere. But what you really need to worry about is the store building a case against you across multiple instances of shoplifting, and then reporting you to the police as soon as you’ve stolen a felony amount.

Not true, at least a couple of the but chains, e.g. target, will keep track of you even at different stores.
