It sounds like it would work for 99% of people but as I only buy ethically sourced meat and don’t cook it often at home, and it being just for me - the price & effort ratios are too broken for my use case. If I’m going to that level of effort I might as well crack out the smoker with some brisket and short rib which would be far superior.
So I’m in somewhat of an annoying pickle.

Ah ok, we have done that before but it still leaves a gaping hole for my craving of a beef smash patty 😢
