Are the Linux system partitions encrypted by default ?, I've tried to encrypt them using Veracrypt, but it says that it only works on Windows ?.

Just as a side-note: "full-disk encryption" only means that the data on drives while they are turned off (or taken out of the device) is difficult to access.
As long as the device is running or only in standby there is no security benefit at all (and plenty of technical and performance down-sides).
