I’ve never actually had my WiFi drop out when the microwave was running. I assumed this was mostly a myth or an issue with older versions of WiFi.

Only if your microwave is poorly shielded. 2.4Ghz works fine right next to mine with the router on a different floor, on the other side of the house.

“Samples of all models of microwaves are tested for leakage before sale as prescribed in Australian Standard 60335.2.25:2011 clause 3. The standard says leakage at any point 50 mm or more should not exceed 50 W/m2, a level which is internationally recognised as safe.”

In other words, microwave ovens can leak, be compliant and safe and still overwhelm a Wi-FI network running at 0.1 Watts.

Maybe if you’re using a device within 50mm of the microwave and you’re manually setting your AP to run at minimum power.
Moving slightly away from the microwave will fix this. Don’t use your WiFi within inches of the microwave when you already have a very low signal.
