Rapid tests that rely on nasal swabs are prone to false negatives, so a lot of people get mild symptoms like sniffles or an itchy throat, test negative, and then assume they don't have covid when they actually might
Mild symptoms don't mean mild disease, either -- there are people who never show symptoms and still end up with vascular damage. It's never a good idea to only judge a virus by its acute symptoms

Most people won’t be testing themselves anymore. I have a few tests left over that I got from work but the vast majority of people will just put symptoms down to a cold and will likely only test if they end up going to hospital.

This is what I was going to say - you won’t find what you don’t test for, and these days next to no one outside specialist healthcare settings will be testing.
Best we can hope for these days is that sewage monitoring is still in place.
