Tbf, during the seige of Paris, they were starving and started grabbing anything they could find.
Being French, they would rather starve than not cook whatever they found in the garden or the zoo in a fancy way.

Not that it makes eating ortolan any better, but the shame thing is made up. It’s to inhale the brandy fumes.
