I think it has to do more with experience in the USA.

For a large part of the USA, Mexicans are the dominant immigrant group. Americans also have the most experience with portions of Mexican cuisine that they don’t have with other regions. So, people hear Latin American and auto complete to Mexican because that is what they know.
