Also she somehow did all that travel while presumably under the run as well

No, she left them in the woods to go back to the city on a pointless side quest and the girls find the diner (in the woods?); she left them with the future Uncle Ben when she fucked off to Peru for like a week. It’s poorly communicated in the movie
