Internally, Discord refers to servers as "guilds", but went with "server" publicly because that was easier for the average user to comprehend. The term stuck, so they've never bothered to change it. Even if they did, there'd likely be resistance from people who don't want to adapt their terminology, so they'll likely continue to refer to guilds as servers indefinitely.
