I rarely skip seasons but if I do it’s always the first season of a show. I do this with mainly with sitcoms because their first seasons can be kind of pointless (plenty of exceptions of course) and are the actors finding their characters. A lot of the time you find there is a pretty big difference between the characters from season 1 to season 2 and it can be jarring. The quality of everything usually gets better in season 2 as well because in the first season they aren’t sure if they’re getting renewed or not.

Perfect example is The Big Bang Theory. I always skip the first season of that show. Penny is dreadful as the “clueless blonde” archetype (lol) and Kaley doesn’t really find the character until season 2 where Penny becomes a much better character. Same with Leonard and even Sheldon gets better in season 2. So whenever I re-watch I always just start at season 2.

My second one would be Supernatural. Unlike BBT the first season of Supernatural is important but I’ve seen it and prefer to jump in when stuff really gets going in season 2. Would love to read your thoughts!
