I'm generally free markets, but history does prove you can't keep hands off totally. Bread was ultimately so corrupted it was tightly regulated because he became more adulterant than wheat. The unregulated parts of china used melomone to increase the protein content of milk, killing people in the process. I routinely review industrial accidents throughout history, and a lot of them are a very good example of why you can't just let people alone. They will hurt more people than they can possibly afford to make whole, and then it becomes everyone else's problem.
