    They arrive at a reasonable position but go a bit awry innthe way:

    The USDA defines processing as:

    washing, cleaning, milling, cutting, chopping, heating, pasteurizing, blanching, cooking, canning, freezing, drying, dehydrating, mixing, or other procedures that alter the food from its natural state. This may include the addition of other ingredients to the food, such as preservatives, flavors, nutrients and other food additives or substances approved for use in food products, such as salt, sugars and fats.

    Basically, don’t do… anything? That sounds awfully similar to eating like a hunter-gatherer. It’s unclear why many of these types of processing would be harmful. (Cooking? Washing?)

    The key advice is to avoid ultra-processed foods. And the general dietary recommendations seem to still point to a Mediterranean+ diet (where the plus is berries), which includes liberal sloshes of olive oil. I was listening to an overview of research into olive oil and that said it may be the polyphenols weren’t the main source of the benefits it brings, that looks to be the oleic acid. That’s high in olive oil, but rapeseed/canola oil has a lot too. That aside, the key to switching from UPF to Mediterranean is that you are avoiding sugar, as well as fats that have been too processed and getting more unsaturated fats, whole grains, etc. which have to be a good thing.
