I don’t think that the jump between 3K and 10K will be much different than the jump between 5K and 10K, but It’s worthwhile to push sharpness on the 10K to see what it can do.

at some point, I’ll be getting a Jnat like you and Pudding like for comparison, and I’m also curious whether I can feel the difference between 8k, 10k, or 12k Naniwa finishing stones

I think that you will. Once you have shaved with 10K and 12K synthetic edges, and assuming you like that level of keenness, 8K will likely feel unfinished.
Moving to packing peanut testing last July, and then in September, made a huge difference for me. Now I have a means to tailor keenness consistently and thereby improve my idea of how apex and edge feel varies with different sharpening stone patterns. You’re going to enjoy this rabbit hole. I’m sure of it.
